Chocolate Mint Truffles


Christmas time has come around yet again and in my Kitchen that also means Truffle Time a family tradition we started a few years back and now is a must do in my kitchen, I make two kinds of Truffles a White Christmas and these Chocolate Mint Truffles, the second being the most popular to the point I have to make two batches as they go so fast and yet they are so easy to make and not too expensive at all.


Chocolate Mint Truffles

Ingredients
250 g plain sweet biscuits
1/2 cup desiccated coconut, fine
2 tablespoons cocoa
I tin condensed milk
1 packet Choc Mint TimTams but any Choc Mint Biscuits work well for that added something special.

3/4 cup of fine desiccated coconut to roll balls in.

Directions
Crush the biscuits in a food processor until it is fine .
Combine in a large bowl, the crush biscuits, 1/2 cup of fine desiccated coconuts and 2 tablespoons of cocoa, and cut cut timtams.
Mix the ingredients well.
Then slowly stir in the can of sweetened condensed milk into the mixture.
When mixed well put in fridge for 30 minutes, then get a teaspoon and roll balls to put in coconut to coat.
Place the 1/4 cups of fine desiccated coconut into a flat plate (You may not need the whole 3/4 cups so just fill the flat plate when needed).
Roll the ball into the fine desiccated coconut. I like to then roll again just a tiny bit to set the coconut on properly.
Store in refrigerator until your ready to eat.
